At the foot of a dormant volcano, this tiny clay-laden vineyard produces intense Riesling with serious ripeness and wicked acidity.
RIGHT TIME
A single cuvee of this unique amalgam was produced. Whole bunches placed gently in a tightly sealed stainless steel fermenter to encourage carbonic maceration — a natural fermentation process which guides the emphasis on lively aromas and vivid fruit.
Carbonic maceration — it’s the pop music of wine fermentations!
